Quorn Spaghetti Bolognese

Quorn Spaghetti Bolognese

large onion(s) (finely diced)

large carrot(s) (finely diced)

1

stick(s) of celery (finely diced)

garlic cloves (crushed)

chopped tomatoes

200

ml

vegetable stock (1 cube per 200ml water)

1

tbsp

tomato puree

1

tsp

dried mixed herbs

Equipment needed: Hob and saucepan.

Method

  1. Heat the oil in a large frying pan, add the onion, carrot, celery and garlic, and cook over a moderate heat for about 5 minutes until the vegetables have softened.

  2. Pour the chopped tomatoes into the pan along with the vegetable stock, tomato puree and mixed herbs.  Simmer gently for about 15 minutes.

  3. Add Quorn mince and continue to simmer for another 10 minutes until the vegetables are cooked and the sauce has thickened. Season with salt and pepper to taste.

  4. Serve with spaghetti and a little grated cheese if available.

Top Tips:

Add a pinch of chilli powder to the Bolognese sauce and serve with rigatoni pasta for a spicy ragu recipe.

You can add a teaspoon of sugar to balance the tomato sauce if needed.

Try adding mushrooms with the chopped tomatoes in step 2.

You can use this mixture to make a lasagne.
