A main meal from surplus: Our top vegetarian recipes

Every week our volunteers are challenged with turning surplus food into delicious and nutritious three-course meals. They’ve gotten pretty creative at transforming a mismatch of food into a vegetarian feast. As it’s National Vegetarian Week, we’ve asked them to share some of their favourite recipes, so you can make a three course meal the FoodCycle way! To kick off, we have a starter from FoodCycle Salford Langworthy!

Pasta bake FoodCycle Langworthy Style

Serves: 25-30

Ingredients

6 Onions

Lots of mushrooms

A couple of mixed pepper

Tinned tomatoes

2kg of pasta

Seasoning and herbs

Method

Gently fry onions until translucent, add chopped mushrooms and thinly sliced peppers. Fry slowly for 15 minutes. Add tomatoes.

Season with salt and pepper and herbs (basil and oregano). Cook slowly with lid on for 40 minutes.

Cook pasta in large pan of boiling water as per instructions (approx. 12 minutes but may be longer in a big FoodCycle quantities). Drain and set aside.

Mix the sauce into the pasta, serve and enjoy!
