BBQ Quorn Fillet with Boston Beans

Quorn BBQ Fillet with Boston Beans

Quorn fillets

BBQ sauce

4

burger buns (sliced)

1

little gem lettuce

1

onion(s) (finely diced)

cloves garlic (crushed)

red pepper (finely diced)

ml

vegetable stock

g

baked beans

smoked paprika

Equipment needed: Oven, baking tray(s), hob and saucepan.

Method

  1. Preheat your oven to 160°C fan/180°C non fan/gas mark 4.

  2. Place the Quorn fillets on a lightly greased baking tray and spread half of the BBQ sauce evenly over the top. Cook for 15 minutes or until  piping hot and reached core temperature.

  3. Meanwhile to prepare the Boston beans, heat oil in a pan and gently fry the onion for 4 minutes until softened. Add the garlic and peppers and continue to fry for 3 minutes. Sprinkle over the paprika, stir and cook for a further minute.

  4. Add the rest of the BBQ sauce and vegetable stock then simmer gently for 10 minutes adding the baked beans for the last 2 minutes.

  5. To serve, divide the little gem leaves between the burger bun bases, top with a BBQ Quorn fillet followed by a spoonful of Boston beans, then add the bun lid.

  6. Serve the remaining Boston beans on the side.

Top Tips:

Try adding sweetcorn to the baked beans.

If available add a slice of tomato to the bun too.

Alternatively you can serve the BBQ fillet with the beans and mashed potato instead of burger buns.
